Biography

Dr. Karen Beathard is an Instructional Professor and Associate Head for Undergraduate Programs in the Department of Nutrition at Texas A&M University. A registered dietitian nutritionist, she is dedicated to empowering students and entry-level professionals to reach their full potential. She leads several student-focused initiatives, including the RD Mentorship Program, Nutrition and Dietetic Career Workshop, and Operation Border Health, and actively volunteers at all levels.
